2011 Cabernet Sauvignon
This wine is made from the smallest, most intensely flavored grapes in our vineyard. It shows a bright brick red color, and showcases aromas of cedar, fig, and mint. Flavors of cassis, leather, and raisins fill the palate with a crescendo of smooth, complex sensations. Light mocha elements linger in the silky finish. Enjoy now, or age for 10-15 years to allow flavors to develop to their full complexity. Our silt-loam soils with rocky shale substrateprovide the ideal growing conditions for an Old World style Cabernet Sauvignon. The vines are dry-farmed on a steep grade which rises from 790 ft. to 875 ft. in elevation. The wine was aged in 50% neutral and 50% new French oak barrels for 24 months before bottling.
